Shredded Beef Burritos With 2-Ingredient Crockpot Chuck Roast
These Shredded Beef Burritos are so easy to make, they’ll be on your dinner table in just 20 minutes.
Why I Love This
This is a great recipe for busy camp days. It uses pre-cooked meat I make at home in my slow cooker. Then, I portion it out and freeze it for future use on camp trips. Get my simple 2-Ingredient Crockpot Shredded Beef recipe so you can make things like these burritos as well as BBQ beef sandwiches, pastas and salads really quickly at camp.
Key Ingredients & Substitutions
When you’re making burritos, it’s all about the toppings. You really only need the meat, some seasonings and tortillas. Then, add your favorite toppings to make it really special.
- Shredded beef (beef chuck roast pre-made in a crockpot then shredded)
- Taco seasoning
- Tortillas
Key Equipment
For this recipe you’ll cook a little onion then re-heat the meat with some taco seasoning. I just like to do it with a cast iron skillet on a camp stove but it also works well using a Blackstone or a pancake griddle over a campfire.
How To Make
Preparation
Step 1. Gather cooking equipment and fuel. Prepare ingredients, as directed.
Cooking Instructions
Step 2. Heat a large frying pan over medium high heat, then heat the olive oil in the pan.
Step 3. Add the onion to the oil, cook until softened.
Step 4. Add the meat, taco seasoning and enough water to moisten the pan.
Step 5. Stir all of the ingredients together, let cook until the meat is heated through and all of the liquid is absorbed.
Step 6. Lay the tortillas on a flat surface, divide the meat equally between them. Top with your favorite toppings.
Step 7. Fold the tortillas, tucking in the ends as you roll them up. Serve hot.
Pairings
I like serving Mexican themed appetizers before the main dish. I reserve some salsa and guac for topping the burritos too. Try these:
- Sweet Onion Salsa served with tortilla chips
- Tortilla chips and Fresh Guacamole
- Mexican Spicy Nuts are a really nice snack with a cocktail or beer because they are slightly spicy and a tad sweet
A side of refried beans is always a nice addition to burritos and tacos too.
